It’s world curry day!

It’s world curry day so we’re cooking up a storm. Try one of our favourite curry recipes below or try a more simple curry recipe with the Denny curry sauce range on SnapnSave.

Ingredients:

Almonds

¼ cup butter

2 onions

2 teaspoons pressed or minced garlic

2 teaspoons grated or minced ginger

1 chili

1 teaspoon salt

2 teaspoons coriander

1 teaspoon cumin

¼ teaspoon red pepper

¼ teaspoon turmeric

¼ teaspoonblack pepper

1/8 teaspoon cinnamon

500g chicken fillet or pieces

¾ cup canned coconut milk or cream

1 tablespoon fresh lemon juice

3 to 5 cups cooked rice (optional)

lemon slices (optional)

Directions:

Roast almonds until lightly brown and then put aside.

Melt butter in a largo pot and saute the onions until soft and lightly browned. Add galic, ginger and chilli. Add spices and stir well.

Add chicken; stir and cook until pieces no longer appear pink. Add coconut milk and crushed red pepper. Stir until mixture comes to boil then reduce heat and simmer 20-25 minutes.

Add the chicken and cook until its no longer raw. Add the cream or coconut milk and stir until this comes to the boil. Reduce heat and simmer for 20 minutes.

It’s nearly time to eat and enjoy!

Stir in the lemon juice and dish up over rice. Add the roasted almonds.
